Daikon Radish Fermented Kimchi

All kimchi is spicy, and our Daikon Radish Kimchi rates about a 7 (on a 1-10 scale). Daikon radishes make splendid ferments, due to their firm apple-like texture and because this nutrient dense root veggie can take on so much of the flavors of the other fresh ingredients and spices.

Transport and Safe Shipment of Fermented Products
We ship orders Monday through Wednesday only. Orders placed by 2 pm EST on Wednesday will ship that day. Orders placed after 2 pm on Wednesdays will ship the following Monday. If you are within a 1 day ship time (in Florida and parts of Georgia, we will ship you on Thursday for a Friday delivery. Our goal is to minimize transit time and keep orders from sitting in a mail sorting facility on Sundays.

When the package arrives at your door the ice packages may be melted and that's okay. The insulation has kept the ferment "cool enough” in transit. Ferments can safely be transported unrefrigerated because it takes several days for the live cultures to enliven and resume the process of fermentation. There is no danger of spoilage or harm to the live cultures during shipping because they are preserved in salt water. Remember that fermentation safely preserved our ancestors' vegetables for thousands of years before refrigeration existed.

What To Expect - Please Read Prior to Purchase
Fermented foods are alive, that’s the very reason we seek them out and want to eat them. Because they are alive, they demonstrate behaviors and personality. These are normal, predictible and expected signs of life, indeed they signify that something has gone right in the ferment.

One behavior is the resumption of fermentation during transit, due to temperature flucuation. This may cause the packages to puff up to some degree and you will probably need to burp some of your packages upon arrival. Although leaking is not common, it can also occur. Simply rinse your package, refrigerate and enjoy. Everything is normal, safe and okay. (If your package is damaged, that’s a different story. We'll take care of you.)

If these facts are outside your comfort zone, we understand. But we kindly ask that you do not purchase our fermented products, because you will be disappointed. We want our customers to be happy, and that starts with us creating the correct set of expectations, from the get-go. Your package will arrive with more detailed information that covers some basics about eating fermented foods. Please enjoy reading it. Thanks!
