Sauerkraut & Corn Salsa aka Cowboy Caviar



  • 1 can corn (15.25oz), you can also use fresh (frozen doesn't work well for this recipe)
  • 1/2 red onion - finely diced
  • 1/4 cup Olive My Pickle Turmeric + Cumin Sauerkraut plus 2 Tbsp of its brine - chopped

  • 1 small red bell pepper - finely diced
  • 2 Tbsp Cilantro - chopped
  • Juice of 2 Limes
  • Salt & pepper - to taste

This homemade salsa recipe, also known as Cowboy Caviar, is the perfect accompaniment to any grilled steak, fish, or pork chop. You can even add it to a salad too!

  1. Combine diced red onion, red bell pepper, sauerkraut, cilantro, lime juice and corn, along with kraut brine and mix well. Add salt and pepper to taste.
