Kraut or sauerkraut is one of the more basic ferments. Kraut is simply shredded green cabbage and salt. Kraut is the fermentation tradition of Germany, eastern europe and slavic regions. Kraut is sour, yes, because green cabbage when fermented takes on a tanginess from the fermentation process.

No. Slaw is shredded and chopped fresh, raw cabbage, typically served with a mayonnaise dressing. By contrast, kraut has undergone the fermentation process, which makes the texture of the cabbage more tender than raw slaw. 

While you CAN just put kraut on a hot dog, there are so many more ways to enjoy it. In fact, kraut is likely the  most versatile ferment around. Treat kraut as a condiment or topping. Enjoy with eggs in the morning. Chop and add into your salad. Layer on your sandwich for a flavor boost. Fermented kraut contains 14 billion colony forming units (CFUs) of lactic acid bacteria per serving. A serving is one quarter cup, or about 2 tablespoons. The most abundant types of probiotic bacteria found in fermented kraut are Lactobacillus Plantarum, Lactobacillus Brevis, Pediococcus Aacidilactici, Pediococcus Cerevisiae and Leuconostoc Mesenteroids.

    Wow! Surprising sweet notes!

    Have not had a great ginger kraut but this one is perfectly tart, sweet, and briney! My photo has lots of fermented things but this is obvious the pink one!

    Calms the stomach

    I am on a calorie deficit life journey. Many times my stomach just doesn’t feel well. A fork full or two calms not only my stomach but any cravings I might be having. The bold flavor is great and welcome distraction from what can be a bland diet.

    First Bite Fan here. If you like pickled onion on your taco, you’re gonna LOVE this stuff on your banh mi! Actually, you’re probably going to eat it by the fork full right out of the bag. I expected a nod to ginger but the balance is perfect! Git u sum!
