Time for a new gut friendly pasta salad, packed with fresh vegetables and gluten-free pasta. This salad is quick to make and bursting with flavor. Perfect for meal prepping, picnics, or a quick, healthy lunch, it offers a delicious way to enjoy a variety of veggies in every bite.
Lemon, Garlic + Brine Vinaigrette
Lemon, garlic, cheese - delicious! This dressing gives us serious scampi vibes and tastes amazing tossed on a salad, grain bowl or even a shrimp pasta salad.
2 oz Veggie Medley Brine
1 juiced lemon
2 oz extra virgin olive oil
1 medium pressed / minced OMP Fermented Garlic Clove
pepper to taste
*optional 1 Tbsp Parmesan- grated or shredded
Whisk together in a bowl or shake in a mason jar.
Instructions
Cook pasta according to box instructions, drain and rinse with cool water.
Drain & chop Veg Medley. Save brine for salad dressing.
Toss pasta with veggies, olives, brine and olive oil (or use the above vinaigrette recipe!)
*Optional- add sliced mozzarella cheese sticks.
Add salt, pepper and parmesan to taste.
