1 medium winter squash – we like acorn or kabocha, halved and seeded

1 cup ground turkey (or chicken/turkey sausage)

1/4 small red onion, diced

1/4 small red bell pepper, finely diced

1 small carrot, finely sliced

1 tsp olive oil

1/2 tsp fresh thyme or 1/4 tsp dried thyme

1/4 tsp smoked paprika

Salt & pepper, to taste

Fresh sage leaf, for garnish

We originally made this with our limited-edition Thanksgiving Sauerkraut – a fan favorite packed with holiday herbs like sage, thyme and oregano. But good news: when that sells out (and it always does), you can swap in Classic Caraway Sauerkraut without missing a beat.
This recipe isn’t just for Turkey Day. It’s a year-round, feel-good food, perfect whenever winter squash is in season, and your gut wants a little love.
Instructions
Preheat oven to 400°F.
Prep squash: Slice your squash in half, scoop out the seeds, and brush the cut sides with a little olive oil. Sprinkle with salt and pepper. Place cut-side down on a baking sheet and roast for 20–25 minutes, just until it’s tender.
Cook turkey filling: While squash roasts, heat olive oil in a skillet over medium heat. Sauté onion, carrot, and red bell pepper until softened, about 3–4 minutes. Add ground turkey, thyme, smoked paprika, salt, and pepper. Cook until turkey is browned and cooked through, about 5–7 minutes.
Stuff it: Flip your roasted squash halves cut side up. Scoop the turkey-veggie mixture right into the squash.
Final bake: Pop the stuffed squash back in the oven for 5–10 minutes, just enough to let all the flavors mingle.
Add Probiotics: top with a generous spoonful of fermented sauerkraut. Add optional ingredients, like sage, pomegranate seeds, or cranberries to make it festive for the holiday season.
