What is kraut or sauerkraut?

Kraut or sauerkraut is one of the more basic ferments. Kraut is simply shredded green cabbage and salt. Kraut is the fermentation tradition of Germany, eastern europe and slavic regions. Kraut is sour, yes, because green cabbage when fermented takes on a tanginess from the fermentation process.

Is kraut the same thing as cole slaw?

No. Slaw is shredded and chopped fresh, raw cabbage, typically served with a mayonnaise dressing. By contrast, kraut has undergone the fermentation process, which makes the texture of the cabbage more tender than raw slaw. 

Should I just put kraut on a hot dog or sausage?

While you CAN just put kraut on a hot dog, there are so many more ways to enjoy it. In fact, kraut is likely the  most versatile ferment around. Treat kraut as a condiment or topping. Enjoy with eggs in the morning. Chop and add into your salad. Layer on your sandwich for a flavor boost. Garnish any dinner plate: kraut is delicious alongside chicken and rice, or on top of your tacos.

Which types of probiotic bacteria are in kraut?

Fermented kraut contains 14 billion colony forming units (CFUs) of lactic acid bacteria per serving. A serving is one quarter cup, or about 2 tablespoons. The most abundant types of probiotic bacteria found in fermented kraut are Lactobacillus Plantarum, Lactobacillus Brevis, Pediococcus Aacidilactici, Pediococcus Cerevisiae and Leuconostoc Mesenteroids.

What are the health benefits of fermented kraut?

    The perfect classic kraut

    This kraut is a perfect compliment to salty, smoked Mets. Served some alongside a gorgeous Easter ham and some ribs that my niece (Small Town Grill) cooked up on her Pit Barrel. Started off with small ramekins of the Classic Caraway and Red w/Ginger krauts on set out . Ended up having to put out much bigger bowls of both because everyone loved both flavors. The Caraway was excellent eaten with just the ham alone, but also piled onto a ham sandwich. No sogginess, right flavor, and perfect crunch. Soooo good!

    The Best Fermented Sauerkraut!

    Seriously, it's the best I've team up with my beef weiner/sausage on a bun with all natural mustard. Plus, I eat it with my salads. My gut is beginning to 😃 😊 😀 smile.

    Best Caraway Fermented Kraut, I’ve ever tasted. Recommend

    I bought a small jar of naturally fermented shredded kraut the day before the Classic caraway kraut was delivered so I could do a taste test. The reason to do the test was because I really didn’t like the taste of sour kraut even though, i do like fresh cabbage. This is my first order and to my surprise, I actually liked the taste and the kraut was even shredded in a larger size. The jar of kraut that I bought can not compare. I recommend buy at least one and try it.

    Best sauerkraut

    I can't say enough about Olive My Pickle ferments. I never thought I'd be able to eat kraut again because of IBS but these ferments are a game changer. This caraway kraut was so good on top of boiled mashed potatoes with butter. Just like my Polish elders taught me. Can't wait to use this to make kielbasa and sauerkraut (I haven't eaten any in years). Thank you Olive My Pickle for creating delicious foods that are healing.     Somewhere I have a picture of OMP Classic Caraway Kraut being the star of my super pastrami Reuben. Pastrami and corned beef, Swiss cheese, Russian dressing on grilled pumpernickel bread.

    l can't find that picture, but here is one of my Mighty Muffuletta...homemade bread, mortadella, capicola, Genoa salami, provolone, Swiss, mozzarella cheeses and of course OMP Muffuletta olive mix.
